Korean BBQ "Pulled" Jackfruit Sliders
For the Jackfruit -
- 1 can Green Jackfruit in Brine (drain it and wash it before using)
- 6 Slider buns
- 1 scallion thinly sliced
- 1/2 tsp garlic powder
- Pinch of salt and pepper
- Korean BBQ sauce (Trader Joe's)
For the Seasame Slaw -
- 1 oz chopped purple cabbage
- 1/2 cucumber juilenned
- 8-9 baby carrots julienned
- 3-4 scallions thinly sliced
- 1 tsp miced ginger
- 1 Tbsp seasame oil
- 2 tsp rice vineger
- 1 tsp seasame seeds
Method: Pre heat oven to 350 degree F. For the Jacfruit, drain and rinse the jackfruit well and dry it with paper towel if you need. Place the jackfruit pieces in a bowl. Add garlic powder, salt, pepper and scallions. Mix well. Take a skillet and heat it. Add 2-3 tsp of any oil and then add the jackfruit pieces. Cook it until golden brown. remove it from the flame and add bbq sauce on it. Mix it well. Now take a baking sheet and place the jackfruit pieces on it. Bake it for 10-15 mins. Remove it from the oven and with two forks pull it like pork or chicken.
For the slaw, Add all the vegetables in a bowl. Take a small bowl, add seasame oil, rice vinegar ginger and seasame seeds. Mix well. Top it over the salad and mix all the ingredients well.
Presentation - Take a slider bun. Fill it with two spoons of jackfruit and two spoons with salad. Top it with seasame seeds and repeat for others.
This is a great appetizer. Its easy to make and completely vegetarian. You can make it when you have friends over and enjoy it !!
