Caldo Verde

This week we will take you through the second state in #foodtalesofindia - Goa. Goa is known for its most amazing beaches and is one of the most popular vacation spots in India. But beyond its beaches lies its rich food culture. Goa is a former Portuguese province and so a lot of it’s food exhibits the Portuguese influence. Caldo Verde which in portuguese means green broth is a medley of potatoe,colard greens like kale and spinach, salt and milk. It’s perfect for a cold night I am sure you will love it.
Ingredients - 2 tbsp olive oil
- 3 celery sticks chopped finely - 1 peeled and finely chopped onion
- 4 garlic cloves - 1 1/2 lbs of yukon gold potatoes, boiled and peeled
- 4 cups of finely chopped kale
- 2 cups spinach finely chopped - 8 cups vegetable broth ( I made my own but you can find a low sodium one in any store)
- 2 green chilies cut into half - salt and pepper to taste
- smoked paprika - 1/4 cup milk ( add almond milk for no dairy)
- 6 quart heavy bottom soup pot
Method - Take the heavy bottom pot. Add oil to it. Add garlic, onions and celery. Sauté it until soft. Now in a saucepan, add vegetable broth and put some green chilies and bring it to a boil. Add potatoes to the heavy bottom pot and sauté it well. Add the vegetable broth. Strain it if you don’t want the chilies. Bring it to a boil. Add kale and spinach to this mix. Boil it for atleast 3-4 mins. With a mixer, mix all the ingredients well. Add salt, pepper and paprika according to your taste. Boil it for some more time. Add milk and some spinach leaves.
