Goa is known for its most amazing beaches and is one of the most popular vacation spots in India. But beyond its beaches lies its rich food culture. Goa is a former Portuguese province and so a lot of it’s food exhibits the Portuguese influence. Caldo Verde which in portuguese means green broth is a medley of potatoe,colard greens like kale and spinach, salt and milk. It’s perfect for a cold night I am sure you will love it. Ingredients - 2 tbsp olive oil - 3 celery sticks chopped finely - 1 peeled and finely chopped onion - 4 garlic cloves - 1 1/2 lbs of yukon gold potatoes, boiled and peeled - 4 cups of finely chopped kale - 2 cups spinach finely chopped - 8 cups vegetable broth ( I made my own but you can find a low sodium one in any store) - 2 green chilies cut into half - salt and pepper to taste - smoked paprika - 1/4 cup milk ( add almond milk for no dairy) - 6 quart heavy bottom soup pot Method - Take the heavy bottom pot. Add oil to it. Add garlic, onions and celery. Sauté it until soft. Now in a saucepan, add vegetable broth and put some green chilies and bring it to a boil. Add potatoes to the heavy bottom pot and sauté it well. Add the vegetable broth. Strain it if you don’t want the chilies. Bring it to a boil. Add kale and spinach to this mix. Boil it for atleast 3-4 mins. With a mixer, mix all the ingredients well. Add salt, pepper and paprika according to your taste. Boil it for some more time. Add milk and some spinach leaves. Boil it well till it is a little thick. Your creamy-rich soup is ready. Goan Fish Curry is an authentic curry recipe prepared using coconut, chillies, masalas and any kind of firm fish. It is a flavourful recipe that tastes best when paired with steam rice. Wet masala: 5-6 red dried chillies, soaked in water 1/2 cup fresh Coconut, sliced 1 tbsp Tamarind Paste 1 inch fresh Ginger, peeled & chopped 3 Garlic cloves ½ medium sized Red Onion, sliced ¼ tsp Turmeric Powder ¼ tsp Cumin seeds ¼ tsp Black Pepper 1 tsp Coriander Seeds 1/2 medium onion chopped Water for grinding Tempering: 1lb any firm fish slices- i used alaskan cod 2 cups water Salt as required 2 green chillies slit Method of preparation: For Marination: To the fish Add some turmeric, salt to it and rub the fish on either side. Massage it well and ensure that you fill in all the cuts and gashes. For the masala: In a mixer jar add sliced coconut, red chillies, coriander seeds, garlic, peppercorns, cumin seeds, onion, green chillies, ginger and grind them. After running it in the grinder for few seconds, scrape the sides off, add tamarind and water. Grind it into a fine paste. Heat a vessel, transfer the paste into it and add in water. Increase the flame and add salt to the curry, give it a good mix. Cover it with a lid and cook it for 10 minutes. Add in the marinated fish, splash the curry on top of the fish, cover it with a lid and cook it for next 8-10 minutes. Add in few slit green chillies and now its ready to plate. All purpose flour/ Gluten free Flour of your choice ½ cups Cocoa powder Unsweetened ⅔ cups Granulated sugar ⅔ cups Brown sugar 1 teaspoon Baking soda 1 teaspoon Baking powder ½ teaspoon Salt Wet Ingredients: ⅓ cups Avocado oil 2 Eggs Room temperature ⅔ cups Milk Room temperature ½ cups Coffee Freshly brewed strong coffee, room temperature Chocolate ganache glaze ½ cups Dark chocolate Good quality semi sweet chocolate ½ cups Heavy cream 2 teaspoon Unsalted butter Room temperature Filling Apricot jam blend Method: Make the chocolate sponge Heat the oven to 425°F and prepare baking tin with parchment paper. Whip together the wet ingredients for 1-2 minutes: Room temperature egg, oil, sugar, coffee and milk. Sift dry ingredients in a bowl : Flour, baking powder, baking soda, cocoa powder and salt. Pour wet ingredients over dry ingredients until combined then pour cake batter into the prepared baking tin. Reduce oven temperature to 356°F. Bake for 50 min or until a toothpick inserted comes out clean. Cool the chocolate sponge on the cooling rack. Cut it horizontally into half and chill in the refrigerator for about 30mins. Assembling the Sachertorte cake Gently heat Apricot Jam so it will be super smooth. Bring it to room temperature, thenlayer the jam on the bottom layer, then place the second layer on top and apply jam layer on top and on the sides. Heat cream in a sauce pan on medium flame until simmering, Add chocolate and butter to it and let the two sit for a minute then stir, then stir in butter until smooth. Bring it to room temperature. Chocolate ganache should not be too runny and it should not be too thick either, but just free flowing to pour over the cake. Pour the ganache on the cake and also on the sides. Smooth the top and let the ganache come all the way to the sides. Refrigerate for 10 minutes for the chocolate glaze to set. Molecular Biologist by profession and a foodie at heart. Apart from being a food lover, I love to cook, bake and create gourmet memories both on the table and off it. But I have the company of my hubby/food critic Abhinav in this journey who not only has a big food influence on my life but he also cooks regulary. I am a huge fan of his amazing creations on the table and I love to style it and capture it too. Being foodies, we both wanted to bring our journey to cyberspace. We have been together for 15 years now and apart from Bollywood and Bombay, food is a major connect between us. Always up for trying/ creating something new whether its food, wine or Cake. My most clear food memory from my childhood is my mom’s homemade gulab-jamuns(milk/dough balls dipped in sugar syrup). They felt like little drops of heaven growing up. Be it Holi,Diwali or any other festival, gulab-jamun was everyone’s favorite. She used to create delicious food and present it in such a way that we kids would look at it and drool all over it. She made everything look pretty and what I know about food and styling is all her. After coming back from school, I would drop my bag and go straight to the kitchen to check whats on the menu for dinner. My mom had a way of presenting food in my lunch box too and I am not kidding I would eat all of it and it was very popular amongst all my friends in school. She made every breakfast, lunch and dinner so special for all of us that we all used to wait for our dinning table sessions. As a kid I remember, my mom used to bake around 5-6 cakes every year for me and my sister's birthday. So call it genes or something else, I find solace in baking. Baking keeps me sane and also calms me down. Its like a stress buster to me. I won't say I am perfect,I am still learning but I enjoy the whole process even if it comes with its own share of goof ups. Living away from home is when you realize how much you miss those days and want everything back. When my mom visited us in the States, I got to experience my childhood. It was pampered with delicious food and all that love she pours in. My mother believes that when you cook something with love which is the most important ingredient, it always tastes good. I adopted the same mantra when I started this journey. But having a partner in crime also helps. We have created a lot of food memories not just by travelling but also at home.
